It’s time to stock up on some yummy staples for the big snowstorm that’s heading to the east coast this weekend! My favorite go-to, good-for-you treat, for breakfast, lunch or snack—especially during a blizzard—is avocado toast! It’s super simple to make, healthy, and tastes AMAZING! So hurry up and head out to get these key ingredients and get ready to watch the flakes fall while you bite into deliciousness!
Ingredients:
2 slices of whole grain bread sliced 3/4” thick
1 ripe avocado, sliced
1 ripe tomato, sliced
3-4 fresh basil leaves
1 tablespoon of olive oil
1 tablespoon of lemon juice
Sea salt or Kosher salt
Fresh ground pepper
Directions:
- Toast the bread to your likeness. I grilled mine on a grill pan with olive oil.
- Mash up the avocado lightly with a fork in a bowl.
- Top the bread with avocado.
- Drizzle with olive oil and lemon juice.
- Slice the tomato and place on top of the avocado spread.
- Break up the basil and garnish on top.
- Sprinkle salt and pepper to your taste.
- Enjoy!
