Time to wipe the slate clean from yesterday’s candy extravaganza! Here’s a healthy treat to whip up if you can’t stand to eatanother piece of Halloween candy! This recipe is from my friends over at Greenblender.com, it’s one of my fave sites for healthy snacks and smoothies.
This delish snack is perfect for fall with butternut squash as the main ingredient creating a thick smoothie base with a starchy quality and a mild taste. In addition to the beta carotene and fiber from both the butternut squash and persimmon (which is fab for your skin), there’s even more fiber in this smoothie thanks to the pear, healthy fat from pumpkin seeds, and anti-inflammatory power from the pumpkin pie spice. The best part about this pie-in-a-glass? It’s in calories, fat and sugar—woot! Read on for the recipe below!
INGREDIENTS:
- 5 oz butternut squash
- 1 persimmon – topped
- 1 pear – chopped
- 1 tsp pumpkin pie spice
- 1 tbsp pumpkin seeds
- 1 cup water
- 1 cup ice
